Chocolate Covered Cherry Rice Krispies Treats
Ingredients:
For the Rice Krispies Layer:
6 cups Rice Krispies cereal
1 (10 oz) bag mini marshmallows
4 tablespoons unsalted butter
1 teaspoon vanilla extract
½ cup maraschino cherries, drained and finely chopped
½ teaspoon almond extract (optional, for extra cherry flavor)
For the Chocolate Topping:
2 cups semisweet or milk chocolate chips
1 tablespoon coconut oil or vegetable shortening
¼ cup maraschino cherries, halved (for garnish)
½ cup white chocolate, melted (for drizzle, optional)
Directions:
Prepare the Cherries:
Drain and finely chop maraschino cherries. Pat dry with paper towels to remove excess moisture.
Make the Rice Krispies Base:
In a large saucepan, melt butter over low heat. Add marshmallows and stir until fully melted.
Remove from heat and stir in vanilla extract, almond extract (if using), and chopped cherries.
Fold in Rice Krispies cereal until evenly coated.
Shape the Treats:
Press mixture into a greased 9x13-inch pan, using a greased spatula or wax paper to smooth the top. Let cool.
Prepare the Chocolate Topping:
In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
Pour melted chocolate over the Rice Krispies layer and spread evenly.
Garnish & Chill:
While the chocolate is still warm, place halved maraschino cherries on top.
Drizzle with melted white chocolate for extra flair (optional).
Let set at room temperature or refrigerate for 30 minutes until chocolate firms up.
Slice & Serve:
Cut into squares and enjoy!
