Island Spiced Lamb Curry with Sweet Peppers
Ingredients
1.5 lbs lamb (cut into cubes, such as shoulder or leg)
2 tablespoons vegetable oil
1 large onion (chopped)
4 cloves garlic (minced)
1 tablespoon ginger (grated)
2 tablespoons curry powder (Caribbean style)
1 teaspoon allspice
2-3 sweet peppers (red, yellow, or green, sliced)
2 cups lamb broth (or water)
2-3 sprigs fresh thyme (or 1 teaspoon dried thyme)
Salt and pepper (to taste)
Instructions
1. Sauté Aromatics
Heat Oil: In a large pot or Dutch oven, heat vegetable oil over medium heat.
Cook Onion: Add chopped onion and sauté until translucent.
2. Brown the Lamb
Add Garlic and Ginger: Stir in minced garlic and grated ginger, cooking for about 1 minute.
Add Lamb: Increase heat to medium-high and add lamb cubes. Brown on all sides for about 5-7 minutes.
3. Add Spices and Liquid
Stir in Curry Powder and Allspice: Add curry powder and allspice, cooking for another minute to release the flavors.
Add Broth and Thyme: Pour in lamb broth and add thyme. Season with salt and pepper.
4. Simmer
Bring to a Boil: Bring the mixture to a boil, then reduce heat to low.
Cover and Simmer: Cover and simmer for about 1.5 to 2 hours, or until the lamb is tender.
5. Add Sweet Peppers
Stir in Sweet Peppers: Add sliced sweet peppers during the last 20-30 minutes of cooking. Cook until the peppers are tender.
6. Serve
Plate the Dish: Serve the island spiced lamb curry hot, ideally over rice or with flatbreads.
