Cajun Grilled Chicken Bites with Creamy Garlic Sauce
Ingredients:
2 lbs boneless, skinless chicken breasts, cut into bite-sized cubes
2 tablespoons Cajun seasoning
1 tablespoon olive oil
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (for garnish)
For the creamy garlic sauce:
1/2 cup unsalted butter
4 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon lemon juice
Salt and pepper, to taste
Directions:
Prepare the Chicken: In a bowl, toss the chicken cubes with olive oil, Cajun seasoning, salt, and pepper. Ensure the chicken is well coated with the seasoning. Set aside to marinate for 15-20 minutes.
Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the chicken bites and cook for about 4-6 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F. Remove from heat and set aside.
Make the Creamy Garlic Sauce: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant. Add the heavy cream and bring it to a simmer. Stir in the Parmesan cheese and lemon juice. Continue to cook, stirring occasionally, for 3-4 minutes until the sauce thickens. Season with salt and pepper to taste.
Combine: Add the grilled chicken bites into the creamy garlic sauce and stir to coat. Let them simmer in the sauce for 2-3 minutes to soak in the flavors.
Serve: Transfer the chicken bites to a plate, drizzle with extra sauce, and garnish with fresh chopped parsley. Serve with your choice of pasta, rice, or a side salad.
