Mango Avocado Rice Stack with Chili Flakes and Lime
Ingredients:
1 cup uncooked long-grain rice
2 cups water
1 ripe mango, peeled, pitted, and diced
1 ripe avocado, pitted and sliced
1/4 cup chopped red onion
2 tablespoons chopped cilantro
1 tablespoon lime juice
1/2 teaspoon chili flakes (or more, to taste)
Salt and pepper to taste
Optional: A drizzle of olive oil or your favorite dressing
Instructions:
1. Rinse the rice under cold water until the water runs clear. Combine the rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until all the water is absorbed and the rice is tender. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
2. While the rice is cooking, prepare the mango and avocado. Dice the mango into bite-sized pieces. Slice the avocado into thin, manageable slices. Finely chop the red onion and cilantro.
3. In a small bowl, combine the lime juice, chili flakes, salt, and pepper.
4. To assemble the stacks, spoon a portion of the cooked rice onto a plate. Arrange avocado slices on top of the rice. Then, top with diced mango. Sprinkle with the red onion and cilantro. Drizzle with the lime juice and chili flake mixture.
5. Season with additional salt and pepper to taste. If desired, add a drizzle of olive oil or your favorite dressing for extra flavor. Serve immediately and enjoy!
