Rainbow Rice Krispie Layer Bars : Colourful, Chewy, Sweet & The Perfect No-Bake Treat for Any Occasion!
Ingredients:
(Makes one 9x13-inch tray — about 20 bars)
- 9 cups crispy rice cereal (1 1/2 cups per colour)
- 6 cups mini marshmallows (1 cup per colour layer)
- 6 tbsp unsalted butter (1 tbsp per layer)
- Gel food colouring (red, orange, yellow, green, blue, purple)
- Optional: rainbow sprinkles for topping
- Nonstick spray or parchment paper for pan
---
Directions:
Step 1: Prepare the Pan
1. Lightly grease a 9x13-inch baking dish or line with parchment paper.
2. Gather 6 small bowls (one per colour) and divide cereal evenly (1 1/2 cups each).
---
Step 2: Make the Layers (One at a Time)
_For each colour layer:_
1. In a nonstick saucepan, melt 1 tbsp butter over low heat.
2. Add 1 cup mini marshmallows and stir until completely melted.
3. Remove from heat and stir in food colouring (a few drops of gel for vibrant colour).
4. Quickly stir in 1 1/2 cups cereal and mix until coated.
5. Press evenly into the baking pan using a greased spatula or wax paper.
6. Repeat for each layer in rainbow order: red, orange, yellow, green, blue, purple.
---
Step 3: Cool & Slice
1. Once all layers are pressed in, let the bars cool completely (about 1 hour).
2. Lift from pan and slice into squares or rectangles.
3. Add sprinkles on top if desired.
---
Tips:
- Use gel food colouring for bold, vibrant colours without thinning the mix.
- Grease your hands or use parchment to press each layer without sticking.
- Store in an airtight container at room temp for up to 3 days.
- Try shaping them into rainbows with cookie cutters for extra fun!
