Rich and Elegant Mushroom and Red Wine Stew
Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 3 cups mushrooms (portobello, cremini, or shiitake), thickly sliced
- 2 carrots, chopped
- 1 cup green beans, trimmed and cut
- 1 cup red wine or grape juice (unsweetened)
- 2 cups vegetable broth
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)
- Salt and black pepper to taste
Directions:
1. Heat olive oil in a large pot. Add onion and garlic, sautéing until softened.
2. Stir in mushrooms, cooking until they soften and brown slightly.
3. Add carrots, green beans, tomato paste, soy sauce, thyme, and paprika. Stir to coat vegetables.
4. Pour in red wine and vegetable broth. Simmer on low for 20 minutes.
5. If you prefer a thicker stew, stir in the cornstarch mixture and simmer for 5 more minutes.
6. Adjust seasoning with salt and pepper. Serve warm with crusty bread or rice.
