Ingredients:
Base:
1 cup / 185g cooked quinoa or brown rice (or mixed greens)
Bowl Toppings:
1 can (15 oz / 425g) chickpeas, rinsed and drained
1 cup / 150g cherry tomatoes, halved
1 English cucumber, diced
1/2 red bell pepper, diced
1/4 cup / 40g red onion, thinly sliced
1/4 cup / 35g Kalamata olives, pitted and halved
1/4 cup / 35g crumbled feta cheese (use plant-based if preferred)
Fresh parsley, chopped (for garnish)

Lemon Tahini Dressing:
1/4 cup / 60g tahini
1/4 cup / 60ml water
3 tbsp / 45ml lemon juice
1 clove garlic, minced
1/4 tsp salt
Pinch of black pepper

Directions:
1. Prepare your base if needed (cook quinoa/rice) and let it cool slightly.
2. Prepare the dressing: In a small bowl, whisk together tahini, water, lemon juice, minced garlic, salt, and pepper until smooth and creamy. Add more water, 1 teaspoon at a time, if needed to reach desired consistency.
3. Assemble the bowls: Divide the base (quinoa, rice, or greens) among serving bowls.
4. Arrange the toppings over the base: Add chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, and Kalamata olives to each bowl.
5. Sprinkle the crumbled feta cheese over the toppings.
