🌿 Hearty, zesty, and full of Mediterranean-inspired flavors, this Greek Chicken & Roasted Potato Bowl is the ultimate comfort dish. 🧾 Ingredients (Serves 2–3)

🍗 Lemon-Oregano Chicken Bites
• 2 boneless, skinless chicken breasts, diced into bite-sized pieces
• 1 tbsp olive oil
• 1 tsp dried oregano
• Juice of ½ lemon 🍋
• 1 clove garlic, minced 🧄
Salt & pepper to taste



🥔 Herb-Roasted Potatoes
• 2 medium Yukon Gold potatoes, diced
• 1 tbsp olive oil
• 1 tsp dried thyme or rosemary
• Salt & pepper to taste



🍚 Garlic Rice
• 1½ cups cooked white or brown rice
• 1 tbsp olive oil
• 1 clove garlic, minced 🧄
• Salt to taste



🥣 Creamy Spinach-Feta Yogurt Sauce
• ½ cup plain Greek yogurt
• ½ cup fresh spinach, finely chopped
• 2 tbsp crumbled feta cheese
• 1 tbsp lemon juice 🍋
• 1 clove garlic, minced 🧄
• Salt & pepper to taste
Water (to thin, if needed)



🔥 Instructions

1. Marinate & Cook the Chicken
• In a small bowl, mix olive oil, oregano, lemon juice, garlic, salt, and pepper.
• Coat chicken bites and let marinate for at least 15 minutes.
• Heat a skillet over medium-high heat and cook chicken bites for 3–4 minutes per side until golden and cooked through.
• Remove from heat and set aside.



2. Prepare the Roasted Potatoes
• Preheat oven to 400°F (200°C).
• Toss diced potatoes with olive oil, thyme or rosemary, salt, and pepper.
Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until golden and crispy.



3. Make the Garlic Rice
• In a skillet, heat olive oil over medium heat.
• Add minced garlic and sauté for 1 minute.
• Stir in cooked rice and season with salt.
• Cook until warmed through.



4. Prepare the Spinach-Feta Sauce
• In a small bowl, whisk together Greek yogurt, chopped spinach, feta, lemon juice, garlic, salt, and pepper.
• Add water a teaspoon at a time until the sauce reaches a smooth, drizzleable consistency.



5. Assemble the Bowl
• Start with a base of roasted potatoes and garlic rice.
• Top with lemon-oregano chicken bites, fresh spinach, and cherry tomatoes.
• Drizzle with creamy spinach-feta yogurt sauce.
Garnish with extra feta or a sprinkle of oregano if desired.
