📝 Ingredients
1 lb thinly sliced ribeye steak (or deli roast beef in a pinch)
1 tablespoon olive oil or butter
1 small green bell pepper, thinly sliced
1 small onion, thinly sliced
1/2 cup mushrooms, sliced (optional but yum)
1 teaspoon garlic powder
Salt & pepper to taste
8 slices provolone cheese (or mozzarella, if you're feeling wild)
2 tablespoons cream cheese (optional, for extra gooeyness)
🔥 Directions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Sauté the veggies:
In a skillet over medium heat, add olive oil. Toss in bell pepper, onion, and mushrooms. Sauté for 5–7 minutes until soft. Season with garlic powder, salt, and pepper.
Cook the steak:
Push the veggies to the side of the pan. Add in your sliced steak (or deli beef) and cook until just browned. Don’t overcook—it’ll bake too!
Mix it all up:
Stir everything together in the skillet. If you're using cream cheese, stir it in now until melted and combined for extra creamy filling.
Lay out the cheese slices:
On the prepared baking sheet, place slices of provolone (or whatever cheese you're using) with some overlap to form a base—2 slices per roll-up works best.
Bake the cheese base:
Pop it in the oven for about 5–6 minutes, just until the cheese starts to bubble and the edges get a bit crispy.
Assemble the roll-ups:
Take the cheese out and let it cool for just a minute (so it’s not lava). Spoon your steak-veggie filling onto each melted cheese set and carefully roll it up using a spatula or your fingers (careful, it's still hot!).
Optional: Bake again
If you want them crispier, throw them back in the oven for 5 minutes.
