Honey Glazed Chicken with Brown Rice Pasta

Sweet and Savory Honey Glazed Chicken on Brown Rice Fusilli

Ingredients:

12 oz brown rice pasta (fusilli or penne)

1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

2 tablespoons olive oil

2 tablespoons soy sauce (low sodium)

3 tablespoons honey

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon cornstarch mixed with 2 tablespoons cold water

1/4 teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

2 green onions, sliced

1 tablespoon sesame seeds (optional)

Directions:

Cook brown rice pasta according to package instructions. Drain and set aside.

In a bowl, mix soy sauce, honey, garlic, ginger, and crushed red pepper flakes (if using). Set aside.

Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown and cooked through, about 6–8 minutes.

Reduce heat to medium and pour in the honey-soy mixture. Stir to coat the chicken evenly.

Add the cornstarch slurry and cook for another 2–3 minutes, stirring constantly, until the sauce thickens and glazes the chicken.

Toss the cooked pasta with the glazed chicken or serve the chicken over the pasta. Garnish with green onions and sesame seeds.
