🇮🇹 Risotto al Nero di Seppia (Squid Ink Risotto) 🦑🖤
A dramatic and flavorful risotto made with squid ink, tender calamari, and a hint of the sea.

Ingredients:
• 1 cup (200g) Arborio rice
• 250g calamari, cleaned and chopped
• 1 sachet squid ink (about 4g)
• 1 shallot, finely chopped
• 2 tbsp olive oil
• 1/2 cup (120ml) dry white wine
• 4 cups (1L) fish or vegetable broth
Salt and pepper
• Fresh parsley for garnish

Instructions:
1️⃣ Heat olive oil in a pan and sauté the shallot until soft.
2️⃣ Add chopped calamari and cook for 2–3 minutes.
3️⃣ Stir in the rice and toast for 1 minute.
4️⃣ Pour in the wine and let it evaporate.
5️⃣ Gradually add hot broth, stirring constantly.
6️⃣ Halfway through, add squid ink and continue cooking until creamy.
7️⃣ Season with salt and pepper and garnish with parsley. Serve hot!
