So CRISPY PATA RECIPE:
A Filipinos’s favorite delicacy. Dip in spicy vinegar paired with steamed rice. Perfect for a happy meal.
Ingredients:
Pork knuckle or pata (about 3-4 lbs)
Water and Salt (for boiling water and seasoning)
1 Garlic bulb
5 Bay leaves
1 tablespoon Black peppercorns
Cooking oil for deep frying for deep frying
Dipping sauce:
1/4 cup vinegar
2 tablespoons soy sauce
Slices of chilies
Slices of tomatoes
Sluces of onion
Steps:
1. Clean the pork thoroughly.
2. In a large pot, fill it with enough water to cover the pata, and add salt, garlic, bay leaves, and black peppercorns. Bring the water to a boil.
3. Once boiled, add the pork, and let it simmer for about 2 hours or until the meat is tender. Make sure there is enough water to cover the meat.
4. After the pata is tender, remove it from the pot and let it cool down.
5. In a deep frying pan, heat the cooking oil over medium-high heat. When the oil is hot, carefully submerhe the pork into the oil.
6. Fry the pork, until it turns golden brown and crispy on all sides.
7. Carefully remove the crispy pata from the oil and place it on top of paper towels to drain excess oil.
8. Let the crispy pata rest for a few minutes before slicing and serving.
9. Serve with vinegar and soy sauce for dipping.
