Homemade Kewpie Mayo
Recipe:
1 cup avocado oil or any neutral oil
2 egg yolks
1 tsp Dijon Mustard
2 tsp white sugar
2 tbsp Rice wine vinegar
1/2 tsp dashi powder
1 tsp salt
Note: Best to use an immersion blender, but if you don’t, you can use food processor.
Steps:
In a large mixing cup or bowl, add oil, yolks, mustard, white sugar, vinegar, dashi powder and salt. Using the immersion blender, blends everything together until smooth and creamy. Ready to use. Store in the refrigerator up to 5 days. Enjoy!
Note: use pasteurized egg yolks
