400ml canned coconut milk

1 cup water or fish/vegetable broth

1-inch piece of fresh ginger, thinly sliced

2 garlic cloves, crushed

2 stalks lemongrass (smashed or finely chopped)

1 tbsp fish sauce or soy sauce

Juice of 1 lime

Zest of ½ lime

Salt to taste

Fresh cilantro, Thai basil, or mint for garnish

Optional: thinly sliced chili for heat

🍲 How to Make It:
Prepare the broth:
