• ¼ cup red onion, finely chopped 🧅

• Juice of ½ lime 🍋
• Pinch of salt & pepper

🥑 Guacamole
• 2 ripe avocados, mashed 🥑
• Juice of ½ lime 🍋
• Pinch of salt, pepper, and garlic powder

🥗 Toppings
• Shredded lettuce 🥬
• Shredded cheese 🧀 (cheddar or Monterey Jack)

🌶️ Tangy Lime Crema or Chipotle Sauce
• Lime Crema: ½ cup sour cream (or Greek yogurt), juice of ½ lime, salt to taste
• Chipotle Sauce: ½ cup mayo (or sour cream), 1 tbsp chipotle peppers in adobo (or more to taste), salt to taste



🔥 Instructions
1. Marinate & Cook Chicken
• In a bowl, mix chicken strips with chipotle adobo, chili powder, cumin, garlic, olive oil, salt & pepper.
• Marinate 10–15 mins.

2. Prepare Rice & Beans

3. Make Corn Salsa

• Adjust flavor to taste.
4. Mash Guacamole
• In another bowl, mash avocados with lime juice, salt, pepper, and a dash of garlic powder.
5. Mix the Sauce
• For lime crema or chipotle sauce, whisk ingredients until smooth.
• Thin with a bit of water if you prefer a drizzly consistency.
