Ingredients
1 cup creamy peanut butter
Β½ cup unsalted butter, softened
1 teaspoon pure vanilla extract
2 cups powdered sugar
Pinch of salt (optional)
1 cup semi-sweet chocolate chips
1 teaspoon coconut oil (optional, for smoother melting)
Instructions
Prepare the Filling: In a large mixing bowl, combine the peanut butter, softened butter, vanilla extract, powdered sugar, and a pinch of salt if desired. Mix thoroughly until the mixture forms a soft dough.
Shape the Eggs: Scoop out small portions of the peanut butter mixture and roll them into egg shapes. Place them on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
Melt the Chocolate: In a microwave-safe bowl, melt the chocolate chips with the coconut oil (if using) in 30-second intervals, stirring between each interval until smooth and fully melted.
Coat the Eggs: Using a fork or dipping tool, dip each chilled peanut butter egg into the melted chocolate, ensuring itβs fully coated. Allow any excess chocolate to drip off before placing the egg back on the parchment paper.
Set the Chocolate: Return the coated eggs to the refrigerator for another 15β20 minutes to set the chocolate completely. Once firm, store them in an airtight container in the fridge or at room temperature.
