Garlic Chicken Spinach with Broccoli

Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
4 cloves garlic, minced
1 medium yellow onion, chopped
1 head of broccoli, cut into florets
5 oz fresh spinach
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tbsp butter
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Red pepper flakes (optional, for a little kick!)

Directions:

1. First things first, let's get that chicken cooked! Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken cubes and cook until browned on all sides and cooked through, about 6-8 minutes. Season with salt, pepper, and Italian seasoning while cooking. Remove the chicken from the skillet and set aside.
2. Now for the veggies! Add the butter to the skillet and let it melt. Add the minced garlic and chopped onion, and cook until softened and fragrant, about 3-4 minutes.

6. Return the cooked chicken to the skillet. Stir everything together to coat the chicken and vegetables in the creamy sauce.
7. If you like a little heat, sprinkle in some red pepper flakes!
