No Bake Salted Caramel Cookies
Ingredients:
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup coconut sugar
- 1/4 teaspoon sea salt
- 1/2 cup natural peanut butter
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 2 tablespoons caramel sauce (store-bought or homemade)
- A pinch of extra sea salt for topping
Directions:
1. In a large mixing bowl, combine rolled oats, almond flour, coconut sugar, and sea salt.
2. In a small saucepan over low heat, gently warm the peanut butter, honey, and vanilla extract until smooth and combined.
3. Pour the warm peanut butter mixture over the dry ingredients and stir thoroughly until everything is evenly coated.
4. Add the caramel sauce and mix gently to create swirls of caramel throughout the dough.
5. Using a spoon or cookie scoop, form small cookie shapes and place them on a parchment-lined tray.
6. Sprinkle a tiny pinch of sea salt atop each cookie.
7. Refrigerate the cookies for at least 1 hour to firm up before serving.
