🛒 Ingredients
For the Chicken:
500g chicken breast, cubed
2 tbsp olive oil
1 tsp paprika
1 tsp dried oregano
1 garlic clove, minced
Salt & pepper
For the Rice:
250g basmati or jasmine rice
500ml water
Pinch of salt
For the Toppings:
150g cherry tomatoes, halved
1 cucumber, sliced
1 avocado, diced
100g feta cheese, crumbled
½ red onion, pickled (soaked in vinegar, sugar & salt for 15 mins)
Fresh dill
For the Tzatziki:
200g Greek yogurt
½ cucumber, grated & drained
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp dill, chopped
Salt & pepper
👩🍳 Method
Cook rice: Boil rice in salted water until fluffy, ~12–15 mins.
Marinate chicken: Toss with oil, paprika, oregano, garlic, salt & pepper. Grill or pan-sear 8–10 mins until golden.
Prepare toppings: Slice tomatoes, cucumber, avocado. Pickle onion quickly. Crumble feta.
Make tzatziki: Mix yogurt, cucumber, garlic, lemon, dill, salt & pepper.
Assemble bowl: Rice base → chicken → toppings → tzatziki. Sprinkle dill on top.
