π₯ Mediterranean Chicken Rice Bowl with Tzatziki & Feta πΏπ

π Ingredients:
For the Chicken:
300g chicken breast or thighs, cut into chunks π
2 tbsp olive oil π«
2 garlic cloves, minced π§
Juice of 1/2 lemon π
1 tsp dried oregano
1/2 tsp smoked paprika
Salt & pepper
For the Rice Base:
150g basmati or jasmine rice π
300ml water + pinch of salt
Toppings:
100g cherry tomatoes, halved π
1/2 cucumber, sliced π₯
1/2 avocado, diced π₯
40g feta cheese, crumbled π§
50g quick-pickled red onions (see note) π§
Tzatziki Sauce:
120g Greek yogurt
1/3 cucumber, grated and squeezed
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp fresh dill or parsley, chopped
Salt & pepper
π¨βπ³ Instructions:
Cook the Rice: Rinse rice, add to pot with salted water. Cook 12 minutes until fluffy.
Marinate the Chicken: Mix oil, garlic, lemon, oregano, paprika, salt, and pepper. Coat chicken and marinate at least 15 minutes.
Cook the Chicken: Grill or pan-sear chicken for 5β6 minutes per side until golden and cooked through.
Make Tzatziki: Mix yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper. Chill.
Prep the Veggies: Dice avocado, slice cucumber, halve tomatoes, and crumble feta.
Assemble Bowl: Add rice as the base, then arrange chicken, tzatziki, avocado, cucumber, tomatoes, feta, and pickled onions on top.
Serve: Garnish with parsley and extra lemon wedges.
π Notes & Variations:
Quick-pickled onions: Soak sliced red onion in 2 tbsp vinegar, 1/2 tsp sugar, and 1/2 tsp salt for 15 minutes.
Make it vegetarian by swapping chicken for falafel or grilled halloumi.
Add olives for an extra Mediterranean touch.
