Healthy Greek Chicken Bowls

Ingredients:

For the Chicken Marinade:
1¼ lb boneless, skinless chicken breasts​
¼ cup olive oil
2 tablespoons honey
2 tablespoons lemon juice​
1 tablespoon lemon zest
1½ teaspoons dried oregano
1½ teaspoons dried basil
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon red pepper flakes (optional)​
¼ teaspoon black pepper
For the Bowls:
4 cups romaine lettuce, shredded​
2 cups cherry tomatoes, halved​
2 cups cucumber, diced​
1 cup red onion, thinly sliced​
2 cups cooked white rice (or brown rice/cauliflower rice)​
Directions:

Marinate the Chicken: In a bowl, combine olive oil, honey, lemon juice, lemon zest, dried oregano, dried basil, garlic powder, salt, red pepper flakes (if using), and black pepper. Add the chicken breasts, ensuring they are well coated. Cover and refrigerate for at least 1 hour.​
Cook the Chicken: Heat a skillet over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes on each side, or until golden brown and cooked through. Remove from heat and let rest before slicing.​
Prepare the Base and Vegetables: While the chicken cooks, prepare your chosen base (rice or cauliflower rice) according to package instructions. Wash and chop the romaine lettuce, cherry tomatoes, cucumber, and red onion.​
Assemble the Bowls: Divide the base among four bowls. Top with sliced chicken, romaine lettuce, cherry tomatoes, cucumber, and red onion. Drizzle with tzatziki sauce before serving.
