Cheesy Broccoli Rice Balls
Crispy outside, gooey and cheesy inside — pure comfort in a bite!
Ingredients:
2 cups cooked rice
1 cup steamed and finely chopped broccoli
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
1/2 tsp garlic powder
Salt & pepper to taste
1 cup breadcrumbs
Oil for frying
Optional: parsley for garnish
Directions:
1. In a bowl, combine rice, chopped broccoli, mozzarella, Parmesan, egg, garlic powder, salt, and pepper. Mix well.
2. Shape into balls, about the size of a golf ball.
3. Roll each ball in breadcrumbs until fully coated.
4. Heat oil in a pan over medium heat. Fry balls until golden and crispy.
5. Drain on paper towels and garnish with parsley if desired.
6. Serve hot with your favorite dipping sauce!
