Easy Thai Peanut Slaw Salad Perfect for Potlucks & BBQs 🥜🌈
Ingredients:
Slaw Base:
4 cups / 400g shredded cabbage (green, red, or a mix)
1 cup / 100g shredded carrots
1 red bell pepper, thinly sliced
1/2 cup / 80g shelled edamame, thawed
1/2 cup / 20g fresh cilantro, chopped
1/4 cup / 40g red onion, thinly sliced
1/4 cup / 35g chopped peanuts (for garnish)
Thai Peanut Dressing:
1/3 cup / 80ml creamy peanut butter
1/4 cup / 60ml warm water
3 tbsp / 45ml lime juice
2 tbsp / 30ml soy sauce (or tamari for GF)
1-2 tbsp / 15-30ml maple syrup or agave nectar (adjust to taste)
1 tbsp / 15ml sesame oil
1 clove garlic, minced
1 tsp grated fresh ginger
1/4 - 1/2 tsp red pepper flakes (optional, for spice)
Directions:
1. Prepare the slaw base: In a large bowl, combine the shredded cabbage, shredded carrots, sliced red bell pepper, thawed edamame, chopped cilantro, and thinly sliced red onion. Toss gently to mix.
2. Prepare the dressing: In a medium bowl or jar, whisk together the peanut butter, warm water, lime juice, soy sauce (or tamari), maple syrup (or agave), sesame oil, minced garlic, grated ginger, and optional red pepper flakes. Whisk until smooth and creamy. If the dressing is too thick, add a little more warm water, 1 teaspoon at a time.
3. Pour the dressing over the slaw ingredients in the large bowl.
4. Toss well until the vegetables are evenly coated with the peanut dressing.
5. Let the slaw sit for about 10-15 minutes before serving to allow the flavors to meld slightly.
6. Just before serving, garnish generously with chopped peanuts. Serve as a side dish or a light main course.
