Baked Cod with Lemon and Garlic
Ingredients:
4 cod fillets (about 6 oz each)
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
3 garlic cloves, minced
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons fresh parsley, chopped (optional for garnish)
Lemon slices (for garnish)
Directions:
Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
Prepare the seasoning mixture:
In a small bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, paprika, salt, and pepper.
Season the cod:
Pat the cod fillets dry with paper towels and place them in the prepared baking dish.
Spoon the lemon garlic mixture evenly over the fillets, coating them well.
Bake the cod:
Place the dish in the preheated oven and bake for 12 to 15 minutes, or until the cod is opaque and flakes easily with a fork.
Garnish and serve:
Remove from the oven and let rest for a couple of minutes.
Sprinkle with chopped parsley and garnish with lemon slices.
Serve hot with your choice of sides such as rice, vegetables, or a fresh salad.
