Greek Meatball Bowl with Tzatziki, Rice & Fresh Veggies
Ingredients:
1 lb ground beef or lamb
1/2 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp cumin
Salt and pepper to taste
1 cup cooked rice
1/2 cucumber, sliced
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1/4 cup Kalamata olives, pitted and sliced
1/2 cup tzatziki sauce
Directions:
In a bowl, mix ground beef (or lamb), breadcrumbs, egg, garlic, oregano, cumin, salt, and pepper.
Roll the mixture into small meatballs, about 1 inch in diameter.
Heat a skillet over medium heat and cook meatballs for 6-8 minutes, turning occasionally, until browned and cooked through.
While meatballs cook, prepare rice and assemble the veggies (cucumber, tomatoes, onion, and olives).
Once meatballs are done, serve them over a bed of rice with fresh veggies on the side.
Drizzle tzatziki sauce over the meatballs and veggies before serving.
