Beef Meatballs in Mushroom Gravy

Ingredients:

For the Meatballs:

1 lb ground beef

1/4 cup breadcrumbs

1 egg

2 cloves garlic, minced

1/4 cup grated Parmesan

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

2 tbsp chopped parsley

1 tbsp olive oil (for frying)

For the Mushroom Gravy:

2 tbsp butter

8 oz mushrooms, sliced

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp all-purpose flour

2 cups beef broth

1 tsp Worcestershire sauce

1/2 tsp dried thyme

Salt and pepper to taste

1/4 cup heavy cream (optional, for extra richness)

Directions:

In a large bowl, mix together ground beef, breadcrumbs, egg, garlic, Parmesan, onion powder, salt, pepper, and parsley until just combined.

Shape into 1.5-inch meatballs.

Heat olive oil in a skillet over medium heat. Add meatballs and brown on all sides (about 6–8 minutes). Remove and set aside.

In the same skillet, melt butter. Add mushrooms and onions; sauté until soft and golden, about 5–7 minutes.

Add garlic and cook another 30 seconds. Sprinkle in flour and cook for 1–2 minutes, stirring constantly.

Slowly whisk in beef broth, making sure there are no lumps. Add Worcestershire sauce, thyme, salt, and pepper. Bring to a simmer.

Return meatballs to skillet and simmer in the gravy for 10–12 minutes or until cooked through.

Stir in heavy cream if using, and simmer another 2 minutes.

Garnish with fresh parsley and serve hot over mashed potatoes, rice, or noodles.
