Nasi Goreng (Indonesian Fried Rice)

Ingredients:

3 cups cooked rice, preferably day-old
2 tablespoons vegetable oil
2 eggs, lightly beaten
2 cloves garlic, minced
1 small onion, finely chopped
1 chicken breast, cooked and shredded (optional)
1 cup mixed vegetables (such as carrots, peas, and corn)
2 tablespoons kecap manis (sweet soy sauce)
1 tablespoon soy sauce
1 teaspoon shrimp paste (optional)
1 teaspoon chili paste or sambal oelek (optional)
Salt and pepper, to taste
Sliced cucumber and tomato, for garnish
Fried shallots, for garnish
Lime wedges, for serving
Directions:

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Pour the beaten eggs into the skillet and cook, stirring gently, until scrambled. Remove from the skillet and set aside.
Add the remaining tablespoon of oil to the skillet. Add the minced garlic and chopped onion, and cook until softened and fragrant.
If using, add the cooked chicken breast to the skillet and stir-fry until heated through.
Add the mixed vegetables to the skillet and cook until tender.
Add the cooked rice to the skillet, breaking up any clumps with a spoon.
Stir in the kecap manis, soy sauce, shrimp paste (if using), and chili paste (if using). Mix well to combine.
Return the scrambled eggs to the skillet and toss everything together until evenly distributed.
Season the Nasi Goreng with salt and pepper, to taste.
Serve the Nasi Goreng hot, garnished with sliced cucumber, tomato, fried shallots, and lime wedges on the side.
