Peanut Butter Chocolate Chip Bites
Ingredients:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg (optional)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1 1/2 cups semi-sweet chocolate chips
- 1/4 cup crushed Reese's Pieces, chopped peanuts, or mini M&Ms (optional)
- 1 egg yolk mixed with 1 tablespoon water for brushing
Directions:
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in the egg (if using) and vanilla extract until well combined.
4. Gradually add the all-purpose flour, mixing until just combined to form the dough base.
5. In a separate bowl, combine the creamy peanut butter and powdered sugar until smooth to create the peanut butter layer.
6. Divide the dough base into two portions. Flatten one portion on the prepared baking sheet to form the bottom layer.
7. Spread the peanut butter mixture evenly over the bottom dough layer.
8. Sprinkle the semi-sweet chocolate chips and optional crushed candies or nuts evenly over the peanut butter layer.
9. Crumble the remaining dough over the top to cover the filling partially.
10. Brush the top with the egg yolk and water mixture to achieve a glossy finish.
11. Bake for 20-25 minutes or until the edges are golden and the top is set.
12. Allow to cool completely on the baking sheet before cutting into bite-sized squares.
