Grilled Chicken & Broccoli Bowls with Creamy Garlic Sauce
Ingredients:
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 lime, juiced
For the Creamy Garlic Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
For the Bowls:
- 1 pound broccoli florets, steamed or roasted
- 2 cups cooked rice or quinoa
- Lime wedges, for serving
Directions:
1. Prepare the Chicken:
1.1. Preheat your grill or grill pan over medium-high heat.
1.2. In a bowl, mix together olive oil, paprika, garlic powder, salt, black pepper, cayenne pepper (if using), and lime juice.
1.3. Coat the chicken with the marinade mixture and let it sit for about 15-20 minutes.
2. Make the Creamy Garlic Sauce:
2.1. In a small bowl, combine mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, salt, and black pepper. Mix well and set aside.
3. Cook the Chicken:
3.1. Grill the marinated chicken for about 6-7 minutes per side, or until fully cooked through and nicely charred.
3.2. Remove the chicken from the grill and let it rest for a few minutes before slicing.
4. Assemble the Bowls:
4.1. Divide the cooked rice or quinoa among serving bowls.
4.2. Top with steamed or roasted broccoli florets.
4.3. Slice the grilled chicken and place it on top of the broccoli.
4.4. Drizzle the creamy garlic sauce over the bowls.
4.5. Serve with lime wedges on the side for an extra burst of flavor.
