Ingredients
For the Chicken:
🍗 1 large chicken breast, sliced
🌿 1 tbsp olive oil
🍋 Juice of 1/2 lemon
🧂 1 tsp dried oregano
🧄 1 garlic clove, minced
🧂 Salt and pepper, to taste
For the Bowl:
🍚 1 cup cooked jasmine rice
🥗 1 cup arugula
🥒 1/2 cup cucumber slices
🍅 1/2 cup cherry tomatoes, halved
🧅 1/4 cup thinly sliced red onion
🌰 1/2 cup chickpeas (cooked or canned, rinsed and drained)
🌼 1/4 cup marinated artichoke hearts
🧀 1/4 cup crumbled feta cheese
For the Tzatziki Sauce:
🥛 1/2 cup Greek yogurt
🥒 1/4 cup grated cucumber (squeeze out excess liquid)
🧄 1 garlic clove, minced
🍋 1 tsp lemon juice
🌿 1 tbsp fresh dill, chopped
🧂 Salt and pepper, to taste
Directions
Marinate and Cook the Chicken: Combine olive oil, lemon juice, oregano, garlic, salt, and pepper in a small bowl. Marinate the chicken for 10 minutes. Cook in a skillet over medium heat for 6–8 minutes per side, or until fully cooked. Let it rest for 5 minutes, then slice.
Prepare the Tzatziki Sauce: In a small bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper. Chill in the refrigerator until ready to serve.
Assemble the Bowl: Divide the cooked jasmine rice between two bowls. Arrange the arugula, cucumber slices, cherry tomatoes, red onion, chickpeas, artichoke hearts, and crumbled feta around the bowl.
Add the Chicken and Tzatziki: Top each bowl with sliced chicken and a dollop of tzatziki sauce.
Serve: Garnish with fresh dill or basil and enjoy this fresh, Mediterranean-inspired meal!
