Chicken and Broccoli Stir Fry 🥦🍗
**Ingredients:
- 450g boneless, skinless chicken breast (sliced)
- 450g broccoli florets, 225g button mushrooms (sliced), 1 tsp garlic (minced), 1 tsp fresh ginger (grated), 1 yellow onion (sliced)
- 1 cup low-sodium chicken broth
- 1 tbsp light brown sugar or honey, 2 tbsp low-sodium soy sauce
- 1/2 tsp black pepper, 1 tbsp cornstarch
- 2 tbsp cooking oil, 1 tsp sesame oil
#### **Directions:**
1. In a small bowl, mix chicken broth, soy sauce, brown sugar (or honey), cornstarch, and black pepper. Stir well to combine and set aside.
2. Heat 1 tbsp cooking oil in a large skillet or wok over medium-high heat. Add chicken slices and cook until browned and fully cooked (about 6-8 minutes). Remove chicken and set aside.
3. In the same skillet, add the remaining 1 tbsp cooking oil and sesame oil. Add garlic, ginger, and onions, and sauté for 2-3 minutes.
4. Add mushrooms and broccoli florets. Cook for about 5-7 minutes until the vegetables are tender.
5. Return the chicken to the skillet, pour the sauce over the mixture, and stir to combine. Let simmer for 2-3 minutes, until the sauce thickens and the chicken is heated through.
6. Serve hot over rice or noodles and enjoy!
