Min-Chicken Fried Rice
Savory Chicken Fried Rice with a Touch of Asian Flair
Ingredients:
2 cups cooked jasmine rice (preferably day-old)
1 cup chicken breast, diced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon sesame oil
2 tablespoons vegetable oil
2 eggs, beaten
1 cup mixed vegetables (peas, carrots, corn)
3 green onions, chopped
2 cloves garlic, minced
Salt and pepper to taste
Directions:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and mixed vegetables. Sauté for 2-3 minutes until the vegetables are tender.
Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce, oyster sauce, and sesame oil. Stir everything together until well combined and heated through.
Return the cooked chicken to the skillet and mix well. Season with salt and pepper to taste. Finally, stir in the chopped green onions just before serving.
