📝 Ingredients:
1 lb (450 g) boneless chicken breast or thighs, cut into bite-size pieces
1 red bell pepper, sliced
1 yellow or orange bell pepper, sliced
1/2 cup roasted cashews 🥜
2 tbsp vegetable oil
2 garlic cloves, minced
1 tsp fresh ginger, grated (optional)
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp hoisin sauce
1 tbsp honey or brown sugar
1 tsp sesame oil
1 tbsp cornstarch + 2 tbsp water (slurry)
Cooked white rice, for serving
Sesame seeds & chopped green onions or cilantro for garnish
👨🍳 Instructions:
Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through. Remove from the skillet and set aside. In the same pan, add garlic, ginger, and sliced bell peppers; stir-fry for 2–3 minutes. Return the chicken to the pan. Add soy sauce, oyster sauce, hoisin, honey, and sesame oil. Stir well. Pour in the cornstarch slurry and cook until the sauce thickens. Stir in cashews. Serve hot over rice, sprinkled with sesame seeds and herbs.
