📝 Ingredients:
For the chicken:
2 boneless, skinless chicken breasts 🍗
1 tbsp olive oil 🫒
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp garlic powder
Salt & pepper to taste
For the guacamole:
1 ripe avocado 🥑
1 small tomato, diced 🍅
1 tbsp red onion, finely chopped 🧅
1 tbsp lime juice 🍋
Salt & pepper to taste
For the pico de gallo:
1 medium tomato, diced 🍅
1 tbsp red onion, finely chopped
1 tbsp chopped cilantro 🌿
1 tsp lime juice
Pinch of salt
👨🍳 Instructions:
Season the chicken with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Grill or pan-sear over medium heat for 6–7 minutes per side until cooked through and slightly charred.
Make the guacamole by mashing avocado and mixing with tomato, onion, lime juice, salt, and pepper.
Prepare pico de gallo by combining all ingredients in a bowl and stirring well.
Serve sliced grilled chicken with a scoop of guacamole and a spoonful of pico de gallo. Garnish with fresh cilantro and lime wedges if desired.
