🍪 Peanut Butter Brownie Swirl Cookies 🍫
Ingredients
For the Peanut Butter Cookie Dough:
1 cup creamy peanut butter
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup packed brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 cup all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
For the Brownie Batter:
½ cup semi-sweet chocolate chips
¼ cup unsalted butter
½ cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
½ cup all-purpose flour
2 tablespoons cocoa powder
¼ teaspoon salt
Instructions
Prepare the Peanut Butter Cookie Dough: In a large mixing bowl, cream together the peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until fully combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Cover and chill the dough for 30 minutes.
Make the Brownie Batter: In a microwave-safe bowl, melt the chocolate chips and butter together in 30-second intervals, stirring until smooth. Let the mixture cool slightly. In a small bowl, whisk together the sugar, egg, and vanilla extract. Stir this into the melted chocolate mixture. Sift in the flour, cocoa powder, and salt, folding gently until just combined.
Assemble the Cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the peanut butter dough and roll them into balls. Flatten each ball slightly with your palm. Repeat with the brownie batter, rolling and flattening it into similar-sized portions.
Create the Swirl: Press one flattened peanut butter dough piece and one flattened brownie batter piece together, twisting them slightly to create a marbled effect. Place the swirled cookies on the prepared baking sheet, spacing them about 2 inches apart.
Bake and Cool: Bake for 8–10 minutes, or until the edges are set but the centers are still soft. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
