🔥 Spicy Tofu Poke Bowl with Sriracha Mayo 🌶️
Ingredients:
For the Tofu:
1 (14 ounce) block extra-firm tofu, pressed and cubed
1 tablespoon soy sauce
1 tablespoon sriracha
1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon cornstarch
For the Sriracha Mayo:
1/2 cup mayonnaise
1 tablespoon sriracha
1 teaspoon lemon juice
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon black pepper
For the Bowl:
2 cups cooked rice (white or brown)
1/4 cup chopped green onions
Sesame seeds (optional)
Instructions:
Prep the Tofu: Press the tofu to remove excess water, then cut into cubes. In a bowl, combine cubed tofu with soy sauce, sriracha, sesame oil, garlic powder, black pepper, red pepper flakes (if using), and cornstarch. Toss to coat.
Bake the Tofu: Spread the tofu cubes on a baking sheet and bake at 400°F (200°C) for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
Make the Sriracha Mayo: In a small bowl, whisk together mayonnaise, sriracha, lemon juice, garlic powder, salt, and pepper until smooth and creamy.
Assemble the Bowls: Place cooked rice in a bowl. Top with crispy tofu, drizzle with sriracha mayo, and garnish with green onions and sesame seeds (if using).
Tips & Tweaks:
For extra crispy tofu, you can pan-fry it instead of baking. Just heat some oil in a skillet over medium-high heat and cook until golden brown on all sides.
Add other veggies to your bowl like shredded carrots, cucumber, avocado, or edamame for more variety and nutrients. 🥕🥒🥑
Adjust the amount of sriracha in the mayo to control the spice level.
You can use different types of rice like jasmine or brown rice.
