My family really enjoys this dish. I usually serve it with a simple rice pilaf and steamed veggies. I got the recipe from a little café in Bass Lake, Ca. several decades ago on a trip to Yosemite National Park.
Whiskey Salmon
4 Tablespoons butter
1/2 cup brown sugar
1/3 cup whiskey - I use Makers Mark
4 salmon filets
salt 'n pepper to taste
Fresh herbs, chopped - whatever herbs you like
Melt butter in a heavy skillet over low heat
Stir in brown sugar , stirring as to not burn
season filets with salt 'n pepper
Place salmon filets into skillet on top of sugar mixture
Cook 5 minutes covered on a low-medium heat
Turn salmon, pour whiskey over filets- cook another 5 minutes
Spoon glaze over filets - garnish with herbs -serve immediately
