Ingredients:
1 tbsp vegetable oil
1 onion, diced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2-3 tbsp red curry paste (adjust to taste)
1 can (14 oz) coconut milk
4 cups chicken or vegetable broth
1 tbsp fish sauce (or soy sauce for a vegetarian option)
1 tbsp brown sugar
2 cups cooked chicken, shrimp, or tofu
1 cup mushrooms, sliced
1 red bell pepper, thinly sliced
1 cup bok choy or spinach
8 oz rice noodles, cooked
Juice of 1 lime
Fresh cilantro, chopped (for garnish)
Green onions, sliced (for garnish)
Directions:
Sauté Aromatics:
Heat oil in a large pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant (about 2-3 minutes). Stir in the red curry paste.
Build the Broth:
Pour in the coconut milk and broth. Stir well to combine, then add fish sauce and brown sugar. Bring to a gentle boil.
Add Veggies & Protein:
Add mushrooms, bell pepper, and your protein of choice. Simmer for 5-7 minutes until the vegetables are tender and the protein is cooked through. Toss in the bok choy or spinach and cook until wilted.
Combine with Noodles:
Add cooked rice noodles to the pot, stirring to coat them in the flavorful broth.
Finish with Lime:
Remove from heat, squeeze in lime juice, and stir. Taste and adjust seasoning if needed.
