Ingredients
12 oz udon noodles
1 lb large shrimp, peeled and deveined
2 tablespoons vegetable oil
1 tablespoon fresh ginger, minced
3 cloves garlic, minced
1-2 tablespoons chili paste (adjust to taste)
4 cups chicken or vegetable broth
1 tablespoon soy sauce
1 tablespoon miso paste
1 tablespoon rice vinegar
1 cup mushrooms, sliced
1 cup bok choy or spinach
1/2 cup carrots, julienned
2 green onions, sliced (for garnish)
1 tablespoon sesame seeds (for garnish)
Fresh cilantro or basil (optional, for garnish)
Instructions
Prepare the Noodles:
Cook Udon Noodles: In a large pot of boiling water, cook the udon noodles according to package instructions until al dente. Drain and set aside.
Prepare the Soup:
Heat Oil: In a large pot or Dutch oven, heat vegetable oil over medium heat.
Sauté Aromatics: Add minced ginger and garlic to the pot. Sauté for about 1 minute until fragrant.
Add Chili Paste: Stir in chili paste and cook for another 30 seconds.
Add Broth: Pour in the chicken or vegetable broth. Stir in soy sauce, miso paste, and rice vinegar. Bring to a simmer.
