Classic Chicken Pad Thai 🍜🥜
This Classic Pad Thai is a delicious and easy stir-fried noodle dish packed with tender chicken, egg, crunchy peanuts, and a sweet, tangy, and savoury sauce. A perfect balance of flavours in every bite!
🛒 Ingredients
For the Sauce:
🥢 Tamarind Paste – 1 tbsp
🍯 Honey or Brown Sugar – 1 tbsp
🛢 Soy Sauce – 2 tbsp
🍋 Lime Juice – 1 tbsp
🌶 Chilli Flakes – A pinch (optional)
For the Stir-Fry:
🍜 Rice Noodles – 200g
🍗 Chicken Breast or Thighs – 250g, thinly sliced
🥚 Eggs – 2, lightly beaten
🧄 Garlic Cloves – 2, minced
🧅 Spring Onions – 3, chopped
🥜 Peanuts – 50g, crushed
🛢 Vegetable Oil – 2 tbsp
🥒 Beansprouts – 100g (optional)
For Garnish:
🍋 Lime Wedges – To serve
🌿 Fresh Coriander – A handful
🌶 Chilli Flakes or Sliced Red Chilli – Optional
👨🍳 Method
1️⃣ Prepare the Noodles:
Cook the rice noodles according to the packet instructions, then drain and set aside.
2️⃣ Make the Sauce:
In a small bowl, mix together tamarind paste, honey (or sugar), soy sauce, lime juice, and chilli flakes. Set aside.
3️⃣ Cook the Chicken:
Heat 1 tbsp oil in a wok or large pan over high heat.
Add the sliced chicken and stir-fry for 3-4 minutes until golden brown. Remove and set aside.
4️⃣ Scramble the Eggs:
In the same pan, add another 1 tbsp oil and pour in the beaten eggs.
Let them set slightly, then scramble and mix.
5️⃣ Stir-Fry Everything:
Add the garlic, spring onions, and cooked chicken back into the pan.
Toss in the cooked noodles and pour over the sauce.
Stir-fry everything for 2 minutes, ensuring the sauce coats the noodles.
6️⃣ Finish with Peanuts & Garnish:
Stir in crushed peanuts and beansprouts (if using).
Serve hot with lime wedges, coriander, and extra chilli flakes if desired.
