Firecracker Shrimp Bowl with Chili Lime Aioli 🔥🦐🌶️

Ingredients:
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 tablespoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (or more, to taste)
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Chili Lime Aioli:
1/2 cup mayonnaise
1 tablespoon lime juice
1 tablespoon chopped cilantro
1 jalapeño pepper, seeded and minced (adjust to your spice preference)
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Bowls:
1 cup cooked quinoa or rice
1 cup black beans, rinsed and drained
1 cup corn kernels (fresh, frozen, or canned)
1 avocado, diced
1/2 red onion, thinly sliced
1/4 cup chopped cilantro
Lime wedges, for serving
Instructions:
1. Prepare the shrimp: In a medium bowl, combine the shrimp with olive oil, chili powder, smoked paprika, garlic powder, cayenne pepper, salt, and pepper. Toss to coat evenly.
2. Cook the shrimp: Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove from heat and set aside.
3. Make the aioli: In a small bowl, whisk together the mayonnaise, lime juice, cilantro, jalapeño, chili powder, salt, and pepper.
4. Assemble the bowls: Divide the cooked quinoa or rice among four bowls. Top with black beans, corn, avocado, red onion, and cooked shrimp.
5. Serve: Drizzle the chili lime aioli over the bowls and garnish with extra cilantro. Serve immediately with lime wedges on the side for extra zest. Enjoy!
