Ingredients:
For the Salad:
🍗 Grilled chicken breast – 1 large (sliced)
🍚 Cooked white or brown rice – 1 cup
🥑 Avocado – 1 large (diced)
🍅 Cherry tomatoes – 1 cup (halved)
🥬 Romaine lettuce or mixed greens – 1 cup
🌿 Cilantro leaves – 2 tbsp (chopped)
For the Dressing:
🍋 Lime juice – 2 tbsp (freshly squeezed)
🍯 Honey – 1 tbsp
🥄 Olive oil – 2 tbsp
🧄 Garlic – 1 clove (minced)
🧂 Salt & black pepper – to taste
Directions:
Prepare the Chicken: Grill a seasoned chicken breast (salt, pepper, garlic powder) for 5 minutes per side until fully cooked. Slice into strips.
Cook the Rice: Prepare 1 cup of rice according to package instructions. Let it cool slightly.
Mix the Salad Base: In a large bowl, combine avocado, cherry tomatoes, lettuce, and cilantro.
Assemble: Layer the cooked rice in the serving bowl, add the salad mixture on top, and arrange grilled chicken slices over it.
Make the Dressing: Whisk lime juice, honey, olive oil, garlic, salt, and pepper in a small bowl until emulsified.
Drizzle & Serve: Pour the dressing over the assembled bowl, toss lightly if desired, and enjoy this hearty, zesty dish!
