Ingredients:
- 1 cup cooked chickpeas (rinsed and drained) (240 grams)
- 1 cup pitted dates (150 grams)
- 1/4 cup peanut butter (60 grams)
- 1/4 cup rolled oats (30 grams)
- 1 teaspoon vanilla extract (5 milliliters)
- 1 teaspoon ground cinnamon (2 grams)
- Pinch of salt (0.5 grams)
Directions:
1. In a food processor, blend the chickpeas, dates, and peanut butter until a sticky dough forms .
2. Add the rolled oats, vanilla extract, cinnamon, and salt. Blend again until everything is well combined.
3. Press the mixture into a lined loaf tin or shape into bars by hand.
4. Refrigerate for at least 1 hour before slicing into bars.
