Cheesy Ground Beef and Rice Casserole Recipe
Ingredients:
1 lb ground beef
1 tbsp olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 tsp Italian seasoning
½ tsp smoked paprika
Salt and pepper, to taste
1 cup uncooked white rice (or brown rice)
2 cups beef broth
1 (10.5 oz) can cream of mushroom soup
1 cup sour cream
1 ½ cups shredded cheddar cheese (divided)
½ cup mozzarella cheese
Fresh parsley or green onions, chopped (for garnish)
Directions:
Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.
In a large skillet over medium heat, heat olive oil. Add the diced onion and cook until softened, about 3–4 minutes. Add the garlic and cook for another minute.
Add the ground beef, breaking it apart as it cooks. Season with salt, pepper, Italian seasoning, and smoked paprika. Cook until the beef is browned and no longer pink. Drain excess grease if needed.
Stir in the uncooked rice, beef broth, cream of mushroom soup, and sour cream. Mix until well combined.
Fold in 1 cup of shredded cheddar cheese and all the mozzarella. Transfer the mixture into the prepared baking dish and spread evenly.
Cover the dish tightly with foil and bake for 35–40 minutes, or until the rice is tender and the liquid has been absorbed.
Remove the foil, sprinkle the remaining ½ cup of cheddar cheese on top, and bake uncovered for an additional 5–10 minutes, until the cheese is melted and bubbly.
Let it rest for 5 minutes before garnishing with chopped parsley or green onions and serving warm.
