Garlic Chicken with Spinach and Broccoli

Ingredients:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
4 cloves garlic, minced
1 medium yellow onion, chopped
1 head of broccoli, cut into florets
5 oz fresh spinach
1/2 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 tbsp butter
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
Red pepper flakes (optional, for a little kick!)

Directions:

Cook the Chicken: Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Once hot, add the chicken cubes. Cook for 6-8 minutes, stirring occasionally, until the chicken is browned on all sides and fully cooked through. Season with salt, pepper, and Italian seasoning while cooking. Once done, remove the chicken from the skillet and set it aside.
Sauté the Aromatics: In the same skillet, add the butter and let it melt. Toss in the minced garlic and chopped onion, sautéing for about 3-4 minutes, until the onion becomes soft and the garlic is fragrant.
Add the Broccoli: Toss the broccoli florets into the skillet. Cook, stirring occasionally, for about 5 minutes until the broccoli becomes bright green and slightly tender yet crisp.
Wilt the Spinach: Lower the heat to medium and add the spinach to the skillet. Stir occasionally and cook until the spinach wilts, which will take around 2-3 minutes.
Make the Creamy Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer, allowing the sauce to thicken a little. Stir in the Parmesan cheese until it’s melted and the sauce becomes creamy and smooth.
Combine Everything: Add the cooked chicken back into the skillet, stirring to coat the chicken and vegetables with the rich, creamy sauce.
Add Some Heat (Optional): For a little extra kick, sprinkle in some red pepper flakes.
Serve and Enjoy: Serve the garlic chicken and veggies over rice, pasta, or cauliflower rice for a lighter option. If you’d like, garnish with extra Parmesan for even more cheesy goodness.
