🍍 Hawaiian Grilled Teriyaki Chicken
📝 Ingredients:
2 lbs boneless, skinless chicken thighs
1 cup soy sauce (low sodium preferred)
1 cup pineapple juice (100% juice)
½ cup brown sugar
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp rice vinegar
2 tbsp sesame oil
1 tbsp cornstarch + 2 tbsp water (optional, for thickening sauce)
Sliced green onions & sesame seeds for garnish
Pineapple rings (optional, for grilling)
🔥 Directions:
Marinate the Chicken:
In a large bowl or zip-top bag, mix soy sauce, pineapple juice, brown sugar, garlic, ginger, vinegar, and sesame oil. Add chicken thighs and marinate for at least 2 hours, preferably overnight in the fridge.
Grill the Chicken:
Preheat your grill or grill pan over medium-high heat. Remove chicken from the marinade (reserve the marinade). Grill thighs for about 6–7 minutes per side until fully cooked and slightly charred.
Optional – Thicken the Sauce:
Pour reserved marinade into a saucepan and bring to a boil. Mix cornstarch and water, add to the sauce, and stir until thickened. Simmer for 5–7 minutes.
Grill Pineapple (Optional):
Toss pineapple rings on the grill for 2 minutes per side until charred and caramelized.
Serve & Garnish:
Drizzle the thickened sauce over grilled chicken, top with green onions and sesame seeds. Serve with rice and grilled pineapple!
