Ingredients
1 tsp paprika
1 tsp dried parsley
Β½ tsp oregano
Β½ tsp chili powder
Β½ tsp garlic powder
ΒΌ tsp cumin
ΒΌ tsp salt
ΒΌ tsp freshly ground black pepper
1/8 tsp cayenne pepper
2 tbsp extra-virgin olive oil, divided
2 cod fillets
1 tbsp unsalted butter (or ghee for Paleo & Whole30)
Zest and juice of 2 limes
Cooked rice, quinoa, or cauliflower rice, for serving
Your favorite vegetable, for serving
Instructions
Prepare the Spice Rub:
In a small bowl, mix together paprika, parsley, oregano, chili powder, garlic powder, cumin, salt, pepper, and cayenne. Brush the cod fillets with 1 tbsp olive oil, then generously rub the spice mixture onto the fillets. Refrigerate for at least 30 minutes, or up to 12 hours.
Roast the Cod:
Preheat your oven to 450ΒΊF (230ΒΊC). Place the seasoned cod fillets on a foil-lined baking sheet and roast for 10-12 minutes, until the fish flakes easily and is opaque throughout.
Make the Lime Butter:
While the cod is roasting, melt the butter and remaining tablespoon of olive oil in a small saucepan. Stir in lime zest and juice, swirling the pan to combine.
Serve:
Plate the cod over your choice of rice, quinoa, or cauliflower rice, and serve with a side of vegetables. Drizzle with the lime butter sauce, and enjoy!
