2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & pepper β to taste
For the Rice π
1 cup white rice (or brown rice for a healthier option)
2 cups water (or broth for more flavor)
Pinch of salt
For the Bowl π₯
1 avocado, sliced π₯
1/2 cup corn kernels (fresh or frozen) π½
1/2 cucumber, sliced π₯
1/2 red onion, thinly sliced π°

1 tbsp lime juice π

1οΈβ£ Cook the Rice
Rinse the rice under cold water until the water runs clear.
In a saucepan, combine 1 cup rice with 2 cups water (or broth for extra flavor).
Add a pinch of salt, bring it to a boil, then reduce the heat to low and cover.
Let it cook for about 15 minutes (for white rice) or 30 minutes (for brown rice) until tender. Remove from heat and fluff with a fork.
