Stuffed Pepper Casserole
Ingredients:
1 lb ground beef (or ground turkey)
1 medium onion, diced
3 bell peppers (red, green, yellow), chopped
3 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 1/2 cups cooked rice
2 cups beef broth
2 tsp Italian seasoning
1 tsp paprika
Salt & black pepper to taste
2 cups shredded mozzarella or cheddar cheese
Fresh parsley for garnish
Instructions:
Cook beef & veggies – In a large skillet, brown ground beef with onion, garlic, and bell peppers until softened. Drain excess fat.
Add sauce & seasoning – Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Simmer 10 minutes.
Mix with rice – Stir in cooked rice until combined.
Assemble casserole – Transfer mixture to a greased 9x13 baking dish. Top with shredded cheese.
Bake – Bake uncovered at 375°F (190°C) for 20–25 minutes until cheese is melted and bubbly.
