WOULD YOU EAT THIS Creamy Chicken and Wild Rice Soup
Ingredients:
2 tbsp butter
1 onion, diced
2 carrots, sliced
2 celery stalks, sliced
2 garlic cloves, minced
8 oz mushrooms, sliced
1 lb cooked chicken, shredded or diced
1 cup wild rice, cooked
4 cups chicken broth
1 cup heavy cream
1 tsp thyme
Salt & pepper to taste
Fresh parsley (for garnish)
Instructions:
In a large pot, melt butter. Sauté onion, carrots, celery, and garlic for 5-7 minutes.
Add mushrooms and cook until tender.
Stir in chicken, wild rice, and chicken broth. Add thyme, salt, and pepper.
Simmer for 15-20 minutes.
Stir in heavy cream and heat through (don’t boil).
Garnish with parsley and serve warm.
